The main reason is that people should not master existent right of animals. Not only people but also animals have the right to live. It is unfair to animals whose existent right was only exchanged with people's food.
Another reason is that if people do not eat meat, their health will not be affected. The tenet of Chinese Buddhism forbids monks to kill any animals and eat them.
